The code looks good to me. Just one tiny thing: you stated that

The fast path is deliberately not conditional on SIMD support

but the test is still commented as:

Test UUID shapes that the parser uses the SIMD path.

Maybe it could be changed to:

Test UUID shapes handled by the fast path.
