I followed exactly the update instructions in
http://www.entropy.ch/software/macosx/postgresql/
everything seems to work fine, but after the pg_ctl start command the
log file contains the line

FATAL: invalid value for option 'LC_TIME': 'it_IT'

and the system is not started.

Before I had 7.2.3 perfectly working (and at present I switched back to
it)
