From the source root,

$ mkdir subprojects
$ meson wrap install zstd

From then on, Meson was pretty automagical about it during the ninja
build. The subproject's settings are themselves inspectable and
settable via `meson configure`:

$ meson configure -Dzstd:<option>=<value>
